Measurements

Thin crust is a top US search because it means three different pies. New York is thin and foldable. Tavern is a cracker cut in squares. Neapolitan is thin in the centre and puffy on the rim. This page is the crisp, not-soupy home version.

Drier dough, full heat, fewer toppings. A Baking Steel Original is the tool. A stone works if it is screaming hot. Rolling the rim flat is allowed here. It is not allowed on a Neapolitan.

Start with Classic Cheese Pizza or Folded NY Pepperoni and stretch the round further than the recipe photo. If the centre stays pale, the steel was not ready. Read Why pizza is soggy (and how to fix it) before you add more cheese.

Common questions

How do you make thin crust pizza?
Use the New York Pizza Dough at the lower end of hydration, rest it, and roll or stretch it thin without a puffy rim. Preheat a Baking Steel Original for 45–60 minutes at 290°C (550°F). Sauce thin. Low-Moisture Mozzarella. Bake until the bottom is spotted, not blonde.
Is New York pizza thin crust?
Thinner than pan pizza, thicker than a Chicago tavern cracker. If you want a wedge you can fold, bake Classic Cheese Pizza. If you want a cracker, roll it thinner and cut squares.

Then bake
