- Bench-rest until it is room temperature and relaxed. Press from the centre with your fingers, leave a rim, then use gravity. If a thin spot appears, stop pulling that place. Patch only if you must — a hole is usually a tear you kept working.
- Should I use a rolling pin for pizza dough?
- Not for Neapolitan or a New York slice. A pin degasses the rim and you bake a cracker. Pan pies can take a press in the tin. Round pies want hands.
- Why does my pizza dough keep shrinking back?
