Fresh mozzarella weeps. If you want it on a kitchen-oven pie, tear it, drain it, and go lighter than the photo in your head. For a foldable slice, Low-Moisture Mozzarella is the cheese that behaves.

Water and a cold floor. Fresh mozzarella that was not drained, sauce in a puddle, toppings stacked high, and a stone or steel that did not preheat long enough. Fix heat and moisture before you buy a new oven.
How do I stop pizza from being soggy?
Preheat a Baking Steel Original 45–60 minutes. Sauce thin. Drain Galbani Fresh Mozzarella or switch to Low-Moisture Mozzarella for a longer bake. Less topping than you think. Bake until the underside is spotted, not pale.
Does a pizza stone stop soggy pizza?
