Live alone? Make the dough as written, bake one pie, freeze the extra balls (up to three months). That wastes less than scaling yeast to half a gram. Tonight, for one is a 10-inch / 25 cm pie if you really want a small mix.

Sfincione is the ancestor people point at when they talk about Sicilian pizza — thick, focaccia-like, sold in Palermo streets, often without a blanket of mozzarella. Onions in the sauce, a dust of breadcrumbs, caciocavallo or pecorino.

This is not a Buddy’s Detroit. It is bread that learned tomato.

Ingredients

Pick one dough — homemade or a store-bought ball.

  • Homemade dough

  • 500 g bread flour
  • 350 ml water
  • 12 g salt
  • 5 g instant yeast
  • Olive oil
  • Premade dough

  • 450–500 g store-bought pizza dough, pressed in a pan and proofed until thick
  • Sauce and toppings

  • Onions, cooked soft
  • Crushed tomatoes
  • Caciocavallo or pecorino
  • Breadcrumbs
  • Oregano
  • Anchovy (optional, traditional)

How to make and cook it

Bought dough? Skip “Make the dough.” Let the ball sit out 1 hour, then start at “Cook the pie.”

  2. 01Mix 500 g bread flour, 350 ml water, 12 g salt, 5 g yeast, a little oil.
  3. 02Proof until doubled.
  4. 03Oil a pan, press in, proof until thick.

  6. 01Let a store-bought ball sit out for 1 hour until it is relaxed.

  16. 01Heat to 230°C (450°F).
