Gluten-Free Pizza Dough

By The Slice Guy

A pan dough for a wheat-free night. Crisp edges. Honest about what it is not — and this kitchen also handles wheat.

Wheat-free dough, not a wheat-free kitchen. These recipes were tested at home, in a kitchen that also uses 00 flour. Cross-contamination is possible. Not a medical claim.

Live alone? Make the dough as written, bake one pie, freeze the extra balls (up to three months). That wastes less than scaling yeast to half a gram. Tonight, for one is a 10-inch / 25 cm pie if you really want a small mix.

This will not stretch like Caputo. It will press into a pan and bake into a pie you can share with someone who cannot eat wheat.

Use a blend with xanthan or a 1:1 gluten-free bread flour. Oil the pan. Do not launch it.
