Sticky dough scares people who learned to knead bread until it was a smooth ball. Pizza dough, especially Neapolitan 00 Dough and Pan & Sicilian Dough, is supposed to cling a little. The photo is a wet pan dough. That stick is the point.

Wait 20 minutes before you decide. Flour hydrates late. A shaggy mix often becomes a dough you can fold. Wet your hands or oil them. A bench dusted with King Arthur Bread Flour or Bob’s Red Mill Semolina Flour is for stretching, not for hiding a mistake.

If it is a batter, you added too much water. Weigh the next one. New York Pizza Dough is about 65% water: 325 ml water to 500 g flour. A Wooden Pizza Peel will not save a dough that was never a dough.

Common questions

Why is my pizza dough so sticky?
High hydration, a short rest, or too much water. Neapolitan and pan doughs are supposed to be tacky. A dough that pours is a measuring error. Weigh the water. Cups of flour are the usual way people end up with soup.
Should I add more flour to sticky pizza dough?
A spoon at a time, only if it will not come off the bowl after a 20-minute rest. Dust the bench and your hands. Do not knead in a cup of flour or you will bake a cracker. Oil the bowl if it is climbing your fingers.

Then bake
